Is there a way to quickly erase DMX assignments from a large group fixtures?

Select multiple fixtures (Ctrl-A, DoubleClick, LeftClick first RightClicks than or Ctrl+Clicks) and do what you want.

How do I erase the DMX Values once I have them selected?

Open DMX-In/Out patch window, select Disable and click Apply.
